Not Your Mom's (Veggie) Chili

This chili is definitely not something you've had before. It's got all the goods to keep you feeling strong, but it's low cal and it's vegetarian. What more could you want?!?

P.S. You're going to LOVE the secret ingredient!


WHAT TO BUY

The SEASONINGS: 2 TBSP chili powder, 1 TBSP cumin, 1 tsp paprika, 6 cloves garlic (6 Tj's frozen garlic cubes)  

The VEGGIES: 2 small sweet potatoes (pre-chopped from Tj's), 1 1/2 chopped medium onion (pre-chopped onions from Tj's), 1 chopped green pepper, 1 chopped red pepper, 2 cups mushrooms diced, 3-4 chopped celery sticks, 3-4 chopped carrots

The CANNED GOODS: 2 Chipotle Chilis in Adobo sauce (**THE SPECIAL INGREDIENT**), 2 15-oz cans tomato sauce, 2 15-oz cans diced tomatoes, 1 4-oz can green chilis, 1 can black beans, 1 can white beans

The FILLERS: 1 cup uncooked quinoa, 5 cups veggie broth

HOW YA DO IT:

  1. Place all ingredients into the crockpot and cook on high for 5 hours + 1 hour on low
  2. If you would rather cook in the stockpot, just cook on high for 1 hour + 1 hour on medium/low
  3. Garnish with avocado, scallion, cheddar and greek yogurt
