My Healthier Coconut Cream Poke Almond Cake
It's the COCONUT CREAM POKE CAKE with a twist. Yes, it has sugar in it and I LOVE IT.
WHAT TO BUY
Simple Mills Almond Flour Vanilla Cake & Cupcake Mix
1 tub of Cool Whip Lite
Shredded Coconut (raw chips or shavings with sugar)
2/3 can of GOYA Cream of Coconut
HOW YA DO IT
- Bake the cake according to package directions
- Immediately poke holes into the cake with your fork
- Pour 2/3 can of Cream of Coconut over top the cake. Let it settle throughout the cake
- Let the cake then cool in the fridge
- Once cool, add the cool whip topping to the cake
- Top with coconut shavings
- Serve and eat up you deserve it!
**You can also find lighter versions or opt for the raw cream of coconut, but it definitely doesn't taste as good and the consistency is different. It's OK to live a little and enjoy your sweets. Everything in moderation!**
